How To Cook

  • Bring the fillet roast to room temperature.
  • Preheat your oven to 210 °C. Choose an oven proof frying pan.
  • Rub goose fat or duck fat all over the fillet and season with salt and pepper.
  • In the frying pan sear the beef all over then place in the centre of the oven and roast for 8 – 10 minutes. Turning once or twice.
  • Then remove from oven and let rest.
