ABOUT JUST WILLIAM
Just William’s is owned and run by William Gibson, a third-generation family farmer. William was raised in East Hertfordshire on a 200-acre farm alongside his brother and sisters. Being several years younger than his brother, he enjoyed learning farming from both his modern farming brother and his traditional farming father.
William, following in the footsteps of his late Grandfather, decided to train as a butcher in 2017. He sought to expand his skillset by leaning both traditional and modern butchery techniques.
Just William was created in 2019 after William identified that customers wanted a farm to fork meat experience; flavoursome, low mileage, quality meat which is a direct result of the animal’s diet and lifestyle under the careful management of William.

Just William can promise to always be associated with high standards of animal welfare. Just William will never market factory farmed meat. It goes against William’s standards of rearing happy animals slowly and ethically.
William believes animals must be treated with respect. Growth acceleration is prohibited, instead the maturity of animals is achieved without any intervention except to allow the animals to be raised in a stress-free environment. Good herd management and a grass based diet ensures the animals lead healthy, stress free lives, and in turn produce superb quality meat.
