Just William’s is owned and run by William Gibson, a third-generation family farmer. William, following in the footsteps of his late Grandfather, decided to train as a butcher in 2017. He sought to expand his skillset by leaning both traditional and modern butchery techniques.
Just William was created in 2019 after William identified that customers wanted a farm to fork meat experience; flavoursome, low mileage, quality meat which is a direct result of the animal’s diet and lifestyle under the careful management of William.
HIGH TREES FARM
High Trees Farm is home to William and his Hereford cattle, Romney sheep and Rare Norfolk Bronze Turkeys.
Originally the farm was solely arable until 2016 when William convinced his family to introduce cattle, sheep and turkeys.
All the cattle and the sheep at the farm are grass fed and are completely free range. The turkeys are free range and barn reared. They are provided a simple and natural lifestyle resulting in superbly flavoured meat, perfect for a traditional Christmas roast.
When the time comes to select cattle and lamb for slaughter, William sends them to a local abattoir just miles away, helping to keep the animals’ stress levels to a minimum.
William is extremely proud of the meat produced at his Farm for its customers.
