How To Cook

1. Preheat your grill or oven to medium-high heat (around 200°C for oven roasting).
2. Rub the butterflied leg of lamb with olive oil, salt, pepper, and your choice of herbs, such as rosemary and garlic.
3. For grilling:
- Place the lamb on the hot grill and cook for 15–20 minutes per side for medium-rare, turning once.
For oven roasting:
- Lay the lamb flat on a baking tray and roast for 25–30 minutes, flipping halfway through for an even cook.
4. After cooking, let the lamb rest for 10 minutes before slicing to allow the juices to redistribute.
5. Serve with a fresh salad or grilled vegetables for a perfect meal.
Cooking Note: Cooking times are a general guide and may vary depending on the size of the lamb and your preferred doneness. Use a meat thermometer for accuracy—aim for an internal temperature of 63°C for medium-rare, 70°C for medium, and 77°C for well done.

About Our Lamb

We proudly source our grass-fed lamb from small local farms, including our own and those of our neighboring farmers. Each lamb is carefully butchered and aged using traditional methods in our bespoke butchery unit, ensuring the highest standards of quality.
