The leg offers a lean and tender cut. Diced lamb leg is ideal when time is limited but you crave a lamb stew or casserole. It's also perfect for crafting your own kebabs.

How To Cook

1. Preheat your oven to 160°C/325°F (140°C fan).
2. Season the diced lamb with salt, pepper, and a little olive oil. Optionally, add herbs like rosemary or thyme for extra flavor.
3. Heat a large pan over medium-high heat. Brown the lamb in batches for 4-5 minutes until evenly browned on all sides.
4. Transfer the browned lamb to a casserole dish or roasting tray. Add vegetables like onions, carrots, and garlic if desired.
5. Pour in enough stock or water to just cover the lamb. You can also add wine or tomato paste for extra richness.
6. Cover the dish tightly with a lid or foil and place it in the oven.
7. Cook for 2 to 2.5 hours, or until the lamb is tender and breaks apart easily with a fork.
8. Remove from the oven and allow the dish to rest for 10 minutes before serving.

Note: Cooking times may vary slightly based on the size of the lamb pieces and your oven. Adjust liquid levels as needed during cooking.

We proudly source our grass-fed lamb from small local farms, including our own and those of our neighboring farmers. Each lamb is carefully butchered and aged using traditional methods in our bespoke butchery unit, ensuring the highest standards of quality.
