How To Cook

1. Preheat your oven to 200°C (180°C fan).
2. Season the saddle of lamb with salt, pepper, and olive oil. Optionally, rub with garlic and fresh herbs like rosemary or thyme for extra flavour.
3. Heat a large pan over medium-high heat. Sear the lamb on all sides for 3-4 minutes until nicely browned.
4. Transfer the lamb to a roasting tray and place it in the oven. Roast for:
- 20-25 minutes for medium-rare
- 25-30 minutes for medium
5. Remove from the oven and let the lamb rest for 10-15 minutes before carving to allow the juices to settle.

Note: Cooking times may vary based on the size of the saddle and your preferred level of doneness. Use a meat thermometer for best results—55°C (130°F) for medium-rare and 60°C (140°F) for medium.

We proudly source our grass-fed lamb from small local farms, including our own and those of our neighboring farmers. Each lamb is carefully butchered and aged using traditional methods in our bespoke butchery unit, ensuring the highest standards of quality.
