A slow cooking staple, lamb shoulder needs no introduction. Treat it right with a low temperature and a long cook time, and it will give you succulent rich meat and satisfying flavours for any season.

How To Cook

1. Preheat your oven to 160°C/325°F (140°C fan).
2. Season the lamb shoulder with salt, pepper, and your choice of herbs and spices. Rub with olive oil.
3. Heat a large pan over medium-high heat. Sear the lamb shoulder for 4-5 minutes on each side until browned.
4. Transfer the lamb to a roasting tray. Add vegetables (like onions, carrots, and garlic) and pour in some stock or water.
5. Cover the tray with foil and roast in the oven for 3 to 4 hours, or until the lamb is tender and pulls apart easily with a fork.
6. Remove from the oven and let the lamb rest for 10-15 minutes before serving.

Note: Cooking times may vary based on the size of the shoulder and your oven. Adjust liquid levels during roasting if needed.

We proudly source our grass-fed lamb from small local farms, including our own and those of our neighboring farmers. Each lamb is carefully butchered and aged using traditional methods in our bespoke butchery unit, ensuring the highest standards of quality.
