About Just William
Just William Butchers is owned and run by William Gibson, a third-generation family farmer. Raised on a 200-acre farm in East Hertfordshire, William learned the art of farming from both his modern-thinking brother and traditional father. Following in the footsteps of his late grandfather, he decided to train as a butcher in 2017, mastering both traditional and modern butchery techniques. In 2019, William founded Just William Butchers to meet the growing demand for a true farm-to-fork experience.
