Skinless & Boneless Chicken Thighs

1. Preheat your oven to 200°C (400°F).
2. Season the chicken thighs with salt, pepper, and any desired spices or herbs.
3. Heat a little olive oil in a skillet over medium-high heat.
4. Place the chicken thighs skin-side down in the skillet and cook for 5-7 minutes until the skin is crispy and golden.
5. Flip the chicken thighs over and transfer the skillet to the preheated oven.
6. Roast for 15-20 minutes or until the chicken reaches an internal temperature of 75°C (165°F) and is cooked through.
7. Let the chicken rest for 5 minutes before serving.
