Free Range Chicken Breast Supremes

1. Preheat your oven to 200°C.
2. Pat the chicken breasts dry with paper towels. Season generously with salt, pepper, and any other desired spices or herbs.
3. Heat a little olive oil in an ovenproof skillet over medium-high heat.
4. Place the chicken breasts skin-side down in the skillet. Sear for 5-7 minutes until the skin is crispy and golden brown.
5. Flip the chicken breasts over so the skin side is up. Transfer the skillet to the preheated oven.
6. Roast for 25-30 minutes, or until the internal temperature of the chicken reaches 75°C and the juices run clear.
7. Remove from the oven and let the chicken rest for 5-10 minutes before serving to allow the juices to redistribute.

Note: Cooking times may vary depending on the size of the chicken breasts and your oven. Always check for doneness with a meat thermometer.
