Pork Chops

1. Pat the pork chops dry and season with salt, pepper, and any preferred herbs or spices. For extra flavour, you can rub some oil on the skin.
2. Heat a little oil in a skillet over medium-high heat or preheat your grill to medium-high.
3. Cook the pork chops for about 4-5 minutes per side, basting occasionally with pan juices or a marinade, until the internal temperature reaches 63°C.
4. For crispy crackling, ensure the skin is dry before cooking. You can also score the skin lightly with a sharp knife. Increase the heat for the last few minutes of cooking to crisp up the skin.
5. Let the chops rest for 5 minutes before serving to ensure juiciness.

Note: Adjust cooking times based on the thickness of the chops, and always use a meat thermometer to ensure they are cooked to a safe temperature.
