OUR CATTLE

GRASS FED HEREFORD BEEF

We rear a traditional English breed of cattle. Our traditional Hereford cattle are slowly and naturally reared outside on a grass and forage-fed diet. We keep a small suckler herd of cows, which conceive and give birth naturally once a year. Once the cattle are weaned, they are free to graze in clover-rich pastures all year round.

We are passionate about grass-fed beef to improve the well-being of our cattle and the quality of their meat. Widely believed to be some of the highest quality in the world, grass-fed beef boasts improved ratios of omega 3 and higher nutrient density. Intricately marbled with creamy fat, our beef is not only high quality, but also some of the greatest tasting on the market.

A grain-based diet is unnatural for cattle and can manifest as a range of health problems. Intensively reared cattle are rushed from birth to slaughter in a period of 14-15 months. We are proud to say that our cattle enjoy their free-range lifestyle for around 30 months, double the length of time you can expect from commercially farmed cattle.

OUR LAMB

NORTH COUNTRY AND ROMNEY LAMB

The system that we use for our lamb is about as natural as it gets. English Native breeds are well suited to the climate in Hertfordshire and thrive on lower pastures. Our lambs will continue to grow slowly on pure grass and pasture without getting excessively fat.

Our lambs are weaned on to grass, in herb-rich pasture. In the depths of winter, they might also have forage crops. We don’t feed our lambs any cereal or concentrates. North Country and Romney lamb are ruminant animals and their digestive system is not designed for a diet of cereals. The key to the best lamb is slow, natural growth to maturity, without rapid fattening or growth promoters.

With a dedicated promise to free-range and high welfare farming, William provides the greatest level of care for his animals. Purpose-built shelters are on hand to protect the stock in the event of a particularly harsh winter.

PORK

OUTDOOR BRED LOCAL PORK

All of our pork, including sausages comes from British outdoor-bred pigs that we buy in, we always try and buy locally sourced pork in Hertfordshire and Essex. They all live outdoors, free to roam in large paddocks with access to straw-bedded arcs or tents. All our pigs have access to fresh straw, allowing them the freedom to create a comfy, warm bed. Pigs are born outside and live with the sow outdoors until they’re weaned at around four weeks old. They should be reared on a natural diet of homegrown cereal.

William would love to one day rear his own outdoor bred pigs at his farm. But currently has no experience in rearing pigs but plans to learn over time.

We buy in Free Range Chickens these are birds which are reared for longer, have access to pasture daily, where they can run, dustbathe and forage. At night, the birds return to houses for protection. Our free-range chickens are sourced from Yorkshire.

We also source British barn reared chickens. These birds are reared in purpose-built houses with large windows on each side to allow natural light in. They have straw bales to play with to keep them fit and active, which allows them to behave naturally and are fed a diet enriched with maize which gives excellent eating quality.

DRY AGED MEAT

WHAT IS DRY AGED MEAT?

We hang our beef to dry age, and the amount of time for which the meat hangs depends on each animal. While there are parts of the forequarter – used for stewing and slow cooking – which only really need hanging for a couple of weeks, a forerib or sirloin with a decent fat covering will age for upwards of 30 days. Dry ageing makes a huge improvement to both the flavour and the texture of meat.

Tender, flavoursome meat that you will remember fondly for some time to come and will lead you back repeat orders or to try other produce from farmers who care about their animals is a real long-term plan.
