The most tender cut there is. Lean, soft and luxurious whether roasted, grilled or used in a Beef Wellington or for a decadent sharing roast. The muscle does very little work, which is why it’s the most tender beef cut we sell.
Allow 0.200g per person.
Bring the steak to room temperature. Preheat your oven to 210 °C. Choose an oven proof frying pan. Rub goose fat or duck fat all over the fillet and season with salt and pepper. In the frying pan sear the beef all over then place in the centre of the oven and roast for 8 – 10 minutes. Turning once or twice. Then remove from oven and let rest.
