How To Cook

Preheat the oven to 180°C/gas mark 4
Sprinkle the bones with salt and pepper and bake in the oven for anywhere between 10–20 minutes, depending on their thickness. The marrow should start melting and bubbling.
Remove from the oven and scoop out onto toast, with a further sprinkling of salt and pepper. Serve with a zingy side salad, if desired
