How To Cook

1. Preheat your oven to 220°C.
2. Pat the pork belly dry with paper towels. Rub the skin with a little oil and season generously with salt, making sure it gets into the scores.
4. Place the pork belly on a rack in a roasting pan. This helps the fat drain away from the meat as it cooks.
5. Roast the pork belly in the preheated oven for 20 minutes to start crisping the crackling.
6. Reduce the oven temperature to 160°C and continue roasting for 1 hour and 30 minutes, or until the meat is tender and the crackling is crispy.
7. Check the internal temperature; it should reach 75°C. If the crackling isn't as crispy as you'd like, you can turn the oven back up to 220°C for a few minutes, but watch carefully to prevent burning.
8. Remove the pork belly from the oven and let it rest for 10-15 minutes before slicing.

Note: Cooking times may vary based on the size of the pork belly and your oven. Ensure the crackling is crispy and the internal temperature reaches 75°C before serving.

About Our Pork

All of our pork is sourced from British outdoor-bred pigs, primarily from local farms in Essex. These pigs are raised outdoors in spacious paddocks with access to straw-bedded arcs or tents, allowing them to roam freely. Fresh straw is always available, so the pigs can create warm, comfortable beds. They are born and raised outdoors with the sow until weaning at around four weeks old and are reared on a natural diet, often including homegrown cereals.
