How To Cook

1. (Optional) If you prefer a less salty flavour, soak the gammon joint in cold water for 1-2 hours before cooking. Drain and pat dry.
2. Place the gammon joint in a large pot and cover it with water or a mix of water and apple juice for added flavour. For extra flavour, add a few peppercorns, a bay leaf, and an onion to the pot.
4. Bring the water to a boil, then reduce the heat and simmer gently. Cook for 20 minutes per 500g of gammon plus an extra 20 minutes.
5. While the gammon simmers, preheat your oven to 190°C (170°C fan) or gas mark 5.
6.. Once the gammon is cooked, remove it from the pot and allow it to cool slightly. Remove any skin, leaving a thin layer of fat. Score the fat in a diamond pattern and, if desired, brush with honey or mustard glaze.
7. Place the gammon in a roasting tin and cook for 25-30 minutes, basting occasionally with the glaze, until the fat is golden and crispy.
8. Remove from the oven and let it rest for 10-15 minutes before slicing. Serve hot or cold.

About Our Pork

All of our pork is sourced from British outdoor-bred pigs, primarily from local farms in Essex. These pigs are raised outdoors in spacious paddocks with access to straw-bedded arcs or tents, allowing them to roam freely. They are fed on a natural diet, free of growth promotors or growth hormones, that consists primarily of cereal (wheat and barley), with minerals and vitamins making up the rest.
