How To Cook

1. Preheat: Set your oven to 200°C/400°F (180°C fan).
2. Prepare: Season the lamb rump generously with salt, pepper, and olive oil. Optionally, add garlic, rosemary, or thyme for extra flavour.
3. Sear: Heat a pan over high heat. Sear the lamb joint for 2-3 minutes on each side until browned all over.
4. Roast: Transfer the seared lamb to a roasting tray and place it in the oven. Roast for:
- 20-25 minutes for medium-rare
- 30-35 minutes for medium
5. Rest: Remove the lamb from the oven and let it rest for 10 minutes before carving to retain the juices.

Note: Cooking times are a general guide and may vary based on the size of the joint and your oven. Use a meat thermometer for precision—55°C (130°F) for medium-rare, 60°C (140°F) for medium.

We proudly source our grass-fed lamb from small local farms, including our own and those of our neighboring farmers. Each lamb is carefully butchered and aged using traditional methods in our bespoke butchery unit, ensuring the highest standards of quality.
