How To Cook

1. Before cooking, remove the packaging and allow the joint to dry and reach room temperature.
2. Preheat a fan-assisted oven to 140°C.
3. Lightly season the brisket joint and place it in an ovenproof roasting dish. Add a good amount of wine and a whole pouch of beef stock.
4. Roast in the preheated oven for 4-6 hours, topping up with liquid if needed. The longer it cooks, the better.

Alternatively, for smoking: Set the smoker to 115°C. Place the brisket in the smoker. Remove the brisket from the smoker when it reaches an internal temperature of 87°C, which will take around 8-10 hours.

About Our Beef

We source our grass fed beef from small local farms, including our own, then traditionally butcher and dry age in our bespoke ageing facilities in house. All of our beef is raised to the highest standards on a grass fed diet & comes from traditional native breeds cattle such as Hereford & Angus.
