Boneless beef shin is an affordable, flavorful cut perfect for slow cooking. Best suited to braising, it becomes meltingly tender with a rich, gelatinous texture, ideal for hearty stews and casseroles.

How To Cook

1. Let the beef shin sit for about 10 minutes to reach room temperature.
2. Preheat a fan-assisted oven to 150°C.
3. In a bowl, season plain flour with salt and pepper, then toss the beef shin through the flour.
4. Heat a cast-iron pot over medium-high heat and add beef dripping. Brown the beef shin in the pot, then remove and set aside.
5. In the same pot, add halved shallots and cook until soft. Add herbs, garlic, a glass of red wine, and a pouch of beef stock.
6. Return the beef to the pot, cover with a lid, and place in the preheated oven.
7. Cook for 2-3 hours until the beef is tender.

About Our Beef

We source our grass fed beef from small local farms, including our own, then traditionally butcher and dry age in our bespoke ageing facilities in house. All of our beef is raised to the highest standards on a grass fed diet & comes from traditional native breeds cattle such as Hereford & Angus.
